Scotland is well known for its strong, malty top-fermenting ales. This yeast specially formulated for complex aromatic Scotch Ales. A classic strain similar to California Ale Yeast, White Labs Edinburgh Ale yeast offers a hoppy character which is not attenuated as with WLP002 English Ale Yeast.
This yeast is perfect for brewing bourbon and scotch whisky, as well as Wee Heavy, and English-style ESB. The equivalent for Wyeast is 1728 Scottish Ale Yeast liquid yeast.
