The Portuguese brewery Dois Corvos
Dois Corvos is a Portuguese brewery translated from French as "Two Ravens", hence the fact that you can see it everywhere on their labels and logo. Founded at the end of 2013 by Susana Cascais and Scott Steffens, when craft beer had not yet arrived in Portugal, the brewery will slowly build and finalize the following year, when all the preparations will be done. Located in the industrial district of Marvila, a place that has been abandoned for several decades, it is there that their first beers will be born in 2015 but also their taproom, which will become the first space of this kind in Portugal! Putting all their desire and passion at their disposal, they release more than a dozen different styles for over a hundred brews.
The craft brewery always keeps in mind to brew the best beers, while remaining in authenticity, innovation and especially independence. Currently, the Portuguese brewery Dois Corvos has a production unit of 20hl, with fermenters of 20, 40 and 60hl, as well as bottling and kegging lines. To be able to offer all this craft beer to its customers, our Portuguese friends have a taproom with no less than 17 possible drafts. It's perfect to treat the taste buds of beer lovers who will be able to discover many styles of beer such as IPA, Sour, Barleywine, Stout and even barrel-aged beers. From light and refreshing lagers to very complex dark beers, from experimental to spontaneous fermentation, there is something for everyone! The tasting of Je Ris tu Riz by Dois Corvos
Je Ris tu Riz, well clearly there, we know it's a beer brewed with rice, they couldn't be clearer. If it can be used up to 15% of the grains in the beer, it will bring some paleness to the dress as well as a certain dryness to the whole, to leave more room for the aromatic of the hops. When poured into a glass, the beer reveals a straw yellow color, necessarily very pale and cloudy, topped with a fine white head. The beer incenses us with cereal scents of malt, white bread and cookie, followed by sweet notes of pear, white pepper and chamomile tea. The aromas are very sweet with a medium intensity and highlight the different cereals.
On the palate, it starts with the sweetness of the grains reminiscent of white bread, followed by sweet notes of lemongrass. The beer is crisp with a soft body and a medium dry herbal finish. Overall, it's light and very refreshing. Brewed with local Portuguese Caralion Rice variety normally used for traditional dishes, it is now gradually replaced by cheaper, more economical but also blander varieties. It is also worth noting that the brewery makes its own rice purée which it gelatinizes. Then, the temperature is lowered before adding its barley malt, which will give it more sweetness in the mouth, as well as a perfect balance. To this are added the new world hops, Perle for bitterness and Willamette for late addition hops which makes it very light, refreshing and easy to drink. It is a beer with a light profile, ideal for drinking at a temperature of 6°C, to accompany your dishes such as sushi, sashimi, fried calamari or shrimp.
