Product Description

The Safbrew T-58 is a Saccharomyces brewing yeast that offers spicy, peppery notes. It will not clump, creating a fine layer in suspension in the beer. The fermentation temperature should be between 12 and 25°C (53.6-77°F), with an optimum action between 15-20°C (59-68°F).   If you are using it for your main fermentation, use T-58 yeast at 50-80g/100 litres. For bottle refermentation, use 2.5-5g/100 litres. How to rehydrate dried yeast? Two possibilities, either place the dried yeast in 10 times its weight in water or mash at 27°C +/-3°C. Let it rest for 15-30 minutes, then stir gently for 30 minutes to distribute the yeast throughout the mash.Or pitch it directly into the fermenting vessel, making sure that the mash temperature does not exceed 20°C. Sprinkle the yeast across the entire surface taking care not to allow clumps to form. Allow it to rest for 30 minutes before mixing to aerate your mash.    Storage: The yeast can be transported at ambient temperature so long as this does not last more than 3 months. Once it arrives at its destination, store it in a cool, dry place below 10°C.   The shelf-life for yeast is 2 years from date of production. Check the use-by date on the packet. An open sachet of T-58 yeast can be stored below 4°C and should be used within 7 days of opening. This product is also available in 500g format for brewing larger batches.
