Saflager S-23 is a bottom-fermenting saccharomyces cerevisiae yeast strain particularly popular for the production of fruity, estery Lagers. It offers a low attenuation rate.
Fermentation temperature 9-22°C, optimum action 12-15°C. Use 80-120g/100 litres for fermentation at 12-15°C. Increase dosage for fermentation <12°C, maximum 200-300g/hl at 9°C.
